WHere is a simplified interpretation of a beverage found on the seasonal drinks list. Designed as a large-volume pre-mixed that is loaded full of flavours of the Christmas time, rendering it perfect for a holiday party. Reserve the remaining cordial you can use for brunch beverages, desserts, or to make more rounds of this cocktail.

Serves 10 guests
Ingredients for the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
Making the Cordial: Place every ingredients into a saucepan, bring to a light boil, agitating until the sugar dissolves. Next, remove from the stove allowing it to reach room temperature entirely. Pour into an clean bottle, cap it and store in the refrigerator, where it will keep for around a month.
For the Cocktail Base: Mix all the liquids into a sizeable container, let it rest for one hour, then filter it best through a fine cloth, so it's perfectly clear.
For serving: Measure 85ml of the batch mix to a cocktail shaker filled with ice, gently stirring lightly for one minute to chill. Filter to a frosted cocktail glass or equivalent, garnish with a few cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
